    They were perfect!

    I made this recipe for the second time last night and it was perfect again. I remember the reviews I read when I first found it and am puzzled to see the difficulty other had with it because my uncooked corn cake dough was as moist and perfect last night as the first time. It held together in burger form beautifully.

    I used frozen corn, defrosted it in the microwave, and partially pureed it in the food processor using the plastic dough blade. Also, I used a regular, fine cornmeal. I do not know how that differs from mesa harina but it was all I had in the house.

    I just signed up on this website so that I could leave this review in hopes that it helps someone because I think these corn cakes are fast to make and fabulous. They are now going to be a regular in my culinary repertoire.

    After putting the first one in to cook I realized something was missing. I read 2-3 net recipes, added an egg, some milk and 1/2 tsp of baking powder and they were great!

    She's a doll, HOWEVER, not sure I will ever try another recipe...corn cakes were horrible ~ if eggs are needed that is a pretty important ingredient not to forget to include in the recipe. They would not hold together and the batter was far too sweet..what a waste of time and money to wind up in the garbage disposal. It's not worthy of even one star.

    I believe thare has been an omission of at least one egg to this batter...that might solve your problem sseible! - Bob

    I have tried everything under the sun to keep these together as they cook but I fail at every try! The only way they stay as a cake is to burn the bottom. I even taped the episode and tried to cook along with her but I can't get it right, however the mess of fried batter I have when I do not burn it it quite tasty! Any one got an answer for me?
