    I made this once before and LOVED it. Now I am making it for the 2nd time today and I forgot... is it supposed to be covered in the oven or not?? wish there was a video online.

    Used Shoulder the first time.. using butt this time... we'll see what happens.

    First of all I couldnt find pork shoulder so I got pork butt roast and it was a bit more than 7lbs. I followed the recipe exactly as it read and I think I should have made more since the roast was a bit larger than recipe called for. It was tastty but I think it would have been tastier had I increased the amount of rub. Also not as tender as I hoped but that was due to my impatience..I will definitely keep this recipe and make again and again.
