For the dressing: Whisk together the vegetable oil, vinegar, sugar, sesame oil and soy sauce. Season with salt and pepper.
Toss together the chicken, lettuce hearts, carrots, lettuce and cabbage. Add the dressing and toss to coat. Just before serving, top with the noodles, fried onions and peanuts.
