Lamb Meatball, Mediterranean style

Ingredients

  • 2 pounds ground lamb shoulder or leg
  • 1/4 cup bread crumbs
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped raisins
  • 2 eggs
  • 1/4 bunch fresh mint leaves, chopped
  • 1/4 bunch fresh parsley leaves, chopped
  • 1 1/2 tablespoons salt
  • Freshly ground black pepper

Directions

Preheat the oven to 400 degrees F.

Combine the ground lamb, bread crumbs, walnuts, raisins, eggs, mint, parsley, salt, and black pepper in a large bowl and mix thoroughly until completely consistent.

Roll the meat into golf ball-size portions, about 2-ounces each. Place the meatballs on a well-oiled sheet tray.

Roast the meatballs in the oven for 20 minutes until just firm.

Serve with your favorite sauce and enjoy.
