    This is the stew to end all stews! Well, this and boeuf bourguignon. But for boeuf bourguignon I'm partial to Julia Child's, persnickety though she is. But for blanquette de veau I follow Laura Calder to the letter. No tweaking necessary. It's perfect. Even if it is beige.

    I made this for a group of 20 plus (just make the recipe times 4 and I got rave reviews!! It was easy and I was able to make a small amount for a few guests that could not eat mushrooms. This will be a favorite for years to come. I did serve it with the carrots from the same show also a big hit. Everything I've made from her show has been just wonderful.

    Excellent flavor but had my doubts about the veals appearance while blanching. It won't win any beauty awards, but, the final product was first class and that's what matters. I couldn't find the veal shoulder in my supermarket and had to order from my butcher. I love make ahead dishes so you can enjoy your dinner guests while the entree is reheating. I'd definitely make this again.
