    These were a very impressive dessert at my French dinner party. The pastry came together just as Laura described on the show, and the end result had a perfect airy consistency. I used coffee liquor in the pastry cream and glaze since my store does not carry a coffee essence - this worked fine.

    This is the BEST eclair recipe I have tried. The pastry is fabulous... the texture is perfect in my opinion.
