    This was so easy and so delicious. My husband asked for more and said it was wonderful. I grilled him a steak and had this with it. Yum, I would make this over and over this summer and into the fall with all fresh veggies. It was like eye candy :-

    This was such an easy dish to prepare. The flavors were absolutely amazing and the color vibrant. This dish was prepared for different groups and each was amazed at how simple it was to prepare but how big was the flavor.

    This has become my go-to version of Ratatouille. Great taste. Beautiful result. You need a little time to make this recipe - - so enjoy the process as well as the result!

    Love this stuff! Easy to make, but rather time consuming. Not something to try if you're short on time -- perhaps on a lazy day.

    I thought since the title of this recipe was Lazy Ratatouille, it would be easy - LOL. No. It seems like alot of work actually. It tasted OK, but I have other Ratatouille recipes that are easier to make and taste just as good if not better. A warning, be sure to drain each veggie well before combining. Since I roast my own peppers, I had them packed in olive oil, and with all of the other veggies roasted and sauteed in olive oil, I ended up with ALOT of oil in the bottom of the bowl.
