    Quick, delicious, and so pretty! No mint, but the little shock of grated Parmesan cheese was a lovely finish. This is a keeper.

    Super easy and a great starter! I went a bit lighter and used half and half in place of the heavy cream (though I think canned evaporated milk might work in a pinch, plus I added a healthy grind of black pepper and a pinch of coarse sea salt.

    This is amazing Quick soup.. I did add some butter and dried mint, since I didn't have fresh. My husband loved it, also I put dollop of sour cream on top of the soup as my garnish. Thank you for this show, I've learned a lot of great ideas from Laura.
