I have tried quite a few recipes prepared by Laura Calder and this one is another winner. The pork chops are tender and moist and the potatoes have incredible flavor. A great meal for family dinners or for guests.

We love pork here in the South and this recipe is wonderful. Wish I could find a dish like this on a roadside trip. I've always cut slices in my roast to put in garlic and/or green onions, but never thought of doing this with a pork chop, adds so much flavor and the small amount of bacon gives just the right amount of an earthy flavor to the dish. Thanks also for the idea of putting parchment on top of the food before covering with the lid, really helps keep the chops moist. We love your show.
