That's a LOT of rhubarb, but the result is so tasty! I added an extra cup of water, but left everything else as-is. Delicious!!!!!

I made this from my father-in-law's home grown rhubarb in Maine. The whole family loved it and called it "rhubarb pie-in-a-glass". Brought home a couple pounds to make it for myself.

This was absolutely delicious. It was easy enough to make, the hardest part was the waiting. Rhubarb and Lemon - a perfect summertime taste!
