Directions

Heat the oven to 400 degrees F/200 degrees C.

Put the butter, sugar, salt, 2 to 3 tablespoons cold water and egg in a bowl and mix well. Add the flour and mix quickly only until it holds together. Do not overwork. Roll the dough out to 1/16 of an inch/2 mm thick. Cut into squares. Sprinkle over some fleur de sel and the topping(s) of your choice on each. Transfer to a baking sheet. Bake until puffed, crisp and golden, about 10 minutes.

    I loved these little crackers. I couldn't stop eating them. I put a little grated parmesan cheese and fresh thyme in the flour for flavoring. I didn't over-mix - I gathered up the mixture and patted in together, then rolled it out thin. Sprinkled with kosher salt and white pepper and put fork marks in each one for looks. Baked for 12 mins to lightly toasted. Delicious. Tip: Homemade crackers are not like the boxed kind.

    They were light and flaky. No bricks here. Perhaps you need to use less flour,and don't over work the dough.just gather it up and press into a ball.
