Directions

Heat the oven to 400 degrees F/200 degrees C.

Put the butter, sugar, salt, 2 to 3 tablespoons cold water and egg in a bowl and mix well. Add the flour and mix quickly only until it holds together. Do not overwork. Roll the dough out to 1/16 of an inch/2 mm thick. Cut into squares. Sprinkle over some fleur de sel and the topping(s) of your choice on each. Transfer to a baking sheet. Bake until puffed, crisp and golden, about 10 minutes.

    These tasted like a brick because there is no leavening agent in the recipe!! Maybe Laura can modify the recipe to include one.

    Uuuuugggghhhh! I normally like Laura Calder's recipes. This one was awful. Followed recipe, and what I got was a floury, buttery, salty, thin dough brick. Tried one out on my son, he told me it tasted like a spoonful of flour. Might be ok with afternoon tea, but it's the middle of summer. A waste of 1 & 1/2 sticks of butter. Salted store bought puff pastry would have easier and tastier. Used flavored salts and the whole bit.
