So good, so simple. I never would have thought the mint and pepper flakes would be enough flavor but lo and behold it was so light and delicious and the zucchini was wonderful with it.

This looks very nice for a summer dish. Although, be sure to soak the skewers at least 30 minutes in cold water before threading them. The Burnt wood doesn't look very pretty. Just a thought..

This is a very easy and tasty dish. I liked threading the ribbons of zucchini between shrimp for a colorful presentation. I will keep this recipe in mind before i start up the grill.
