    Extremely easy instructions and marvelously tasty dish worth presenting to family & friends on any occasion but specially on holidays. Covering initially with parchment makes world of difference. Meat full of flavor and super tender. Extracting moisture from eggplant super important so that it stays "meaty" and picks up lamb flavor. No other chef can write, present and explain French cooking at home like Laura. Five stars all the way.

    This was my first foray into eating and cooking French food and the results were surprisingly delicious. I made one major modification to this recipe and that is that i used beef instead of lamb. My entire family including my picky 7 and 9 year old lapped it up. My husband loved it too. Loved how healthy it was too.
