Excellent lentil soup! I didn't have fresh thyme so I used dried and crushed it in my mini mortar and pestle gadget. Also, I used 2 beef and 1 chicken stock for a total of 12 cups. As I didn't have elbows I used mini bow ties. Very delicious, especially with the parm and evo just prior to devouring. Unfortunately, it was so good that I had to have 2 bowls!

Great Soup! Very healthy too.
For more flavor, before I added the onions, etc. I chopped baby bella mushrooms and put them in with a tablespoon of butter & tsp. of evoo and browned them. Then continued with the rest of the ingredients. The mushrooms added a real nice rich flavor.
