    Great soup. I like my soups thicker so I used only 6 cups of broth. Really thick and yummy! Thanks, Giada! Be sure to add the parmesan cheese and EVO at the end. It brings the soup to another level!

    Excellent lentil soup! I didn't have fresh thyme so I used dried and crushed it in my mini mortar and pestle gadget. Also, I used 2 beef and 1 chicken stock for a total of 12 cups. As I didn't have elbows I used mini bow ties. Very delicious, especially with the parm and evo just prior to devouring. Unfortunately, it was so good that I had to have 2 bowls!

    Great Soup! Very healthy too.
    For more flavor, before I added the onions, etc. I chopped baby bella mushrooms and put them in with a tablespoon of butter & tsp. of evoo and browned them. Then continued with the rest of the ingredients. The mushrooms added a real nice rich flavor.
