  • 2 tablespoons shredded fat-free Cheddar cheese
  • Orange slices, for serving, optional

Directions

Spray a large microwave-safe mug with nonstick spray. Add green pepper and onion and microwave until softened, 1 to 2 minutes.

Blot any excess liquid from the vegetables. Add egg substitute and microwave for 1 minute.

Add ham and cheese and lightly stir. Microwave until scramble is just set, an additional 45 to 60 seconds.

Let cool slightly. Garnish with orange slices and serve with an English muffin, if using. Eat up!

    Very testy and quick and easy. I expected it to be rubbery, but the texture was just like scrambled eggs.

    It looks great, but it doesn't follow through with flavor. Fat free cheese should be outlawed for this very reason, it looks the part but never delivers! Leave it out, or use a tiny bit of Cabot 50% reduced cheddar.

    Great recipe! My kids don't care for onions and peppers, so I left them out, and added some fresh spinach and mushrooms. We also substituted deli sliced turkey breast forbthe ham. This is great breakfast for getting the kids a quick hot bite before heading off to the school bus.
