ingredients

  • 1 (2-serving) package tofu shirataki fettuccine-shaped noodle substitute (recommended: House Foods)
  • 1 wedge light spreadable Swiss cheese (recommended: The Laughing Cow)
  • 2 teaspoons reduced-fat Parmesan-style grated topping, plus more for serving, optional
  • 1 teaspoon fat-free sour cream
  • Salt and freshly ground black pepper
  • Fresh parsley, for serving, optional
  • Steamed broccoli, as an accompaniment, optional

Directions

Use a strainer to rinse and drain the shirataki noodles well. Pat dry.

Place in a microwave-safe bowl and microwave 1 minute. Dry as thoroughly as possible, using paper towels. Cut noodles up a bit, using kitchen shears or a knife.

Add cheese wedge, grated topping, and sour cream, breaking the cheese wedge into pieces as you add it. Microwave for 1 minute.

Stir well and then season with salt and pepper. Garnish with parsley and additional grated topping and serve with broccoli, if using. Enjoy!

Cook's Note: Alternatively, recipe can be prepared in a skillet on the stove, over medium-high heat, until hot and well mixed.

    This was better than I was expecting. I made it for my employees after telling them all about it. Most loved it, only had one that was not so thrilled with the noodles. Rinsing, heating and drying noodles prior will help alot. I have made this a couple of times and varied the chees for variety. One of my favorite!!! Thanks Hungry Girl

    It was tasty....however, I couldn't get past the smell or the texture of the noodles. If you could keep the same calories with different noodles it would be at the top of my list.

    This recipe was not as awful as I thought it would be after reading some of the reviews. I found that THOROUGHLY rinsing the noodles and then heating them for 1 minute in the microwave got rid of the smell. Drying the noodles was also important. The taste was good, however I agree with other reviewers that the texture was rather chewy and for that reason I gave it 3 stars.
