I hated this recipe! It just tasted weird. It was too chewy and tasted pasty. I used the laughing cow garlic/herb cheese. I really like it on other things and it's delicious with mashed potatoes, but these noodles were awful. I had more success with the Hungry girl suggestion of eating whole wheat pasta with a mix of spaghetti squash. It tastes close to normal and fills you up with fewer calories.

I was really skeptical about this recipe, since I don't usually cook with tofu products, but the idea of a bowl of fettuccine for under 100 calories was too good to pass up. I used laughing cow light garlic and herb cheese and mixed in a Cajun seasoned chicken breast. It was delicious! The noodles were a little chewier than normal fettuccine, but for the difference in calories, I can live with that!
