Directions

Preheat the oven to 375 degrees F. Spray a 9- by 13-inch pan with vegetable oil.

Toss the peach chunks with the schnapps and lemon juice. Add the peaches to the pan and spread out evenly. In a medium bowl, mix the oats, sugar, flour and salt. Add the butter and, using your fingers, rub the butter into the dry ingredients until mixture resembled small walnut-size crumbles. Sprinkle the crumbles evenly over the top of the peaches. Place in the oven and bake 45 minutes. Serve warm, with vanilla ice cream.

    This was such an amazing crisp. I've made it twice now in less than a week. The first time, my peaches weren't that ripe and I had a hard time removing the skins (boiled briefly and still wouldn't budge!). So, I left the skins on and it was amazing! Both times, I've subbed Brandy for Schnapps because I only had Brandy in my liquor cabinet, added 1/4 each of flour and sugar, and a dash of cinnamon to the peaches. The second one is in the oven right now for a family get together tonight. Can't wait to share it! Thanks Louie and Pete! I had fun watching your episode! :)
