Directions

In a 2-quart saucepan with a wire whisk, mix the sugar, cornstarch, cocoa and salt until combined. Whisk in the milk until blended.

Heat the mixture to boiling over medium heat, stirring constantly. Add the chocolate, and cook 1 minute, stirring until the chocolate melts and the pudding thickens slightly.

Remove the saucepan from the heat and stir in the vanilla. Spoon the pudding into custard cups. Serve warm, or cover the surface of the pudding directly with plastic wrap and refrigerate.

Nutritional information per 1/3 cup serving: 120 calories, 1.3 g fat (0 g saturated), 1.3 mg cholesterol, 70 mg sodium, 25 g carbohydrate, 3.3 g protein.

    I have been making this for a while now, I am addicted. I add a splash of vanilla and have tried it with almond milk too. Top with strawberries! Yummmy

    I am a low-fat/fat-free chocolate pudding fanatic!!! I don't really like to buy the powdered box mixes or the refrigerator section pudding because of all the chemicals! I saw this on Good Housekeeping Drop 5 lbs. and it looked good. I just made it and it is definitely a keeper. Many other recipes that I have tried get thick while cooking and then they get runny in the refrigerator. Not this one!!! Thank you. I will be making this quite often.

    Velvety smooth, so quick and easy. Love it warm or cold! I add 1/2 teaspoon of instant coffee granules to the dry ingredients to enhance the chocolate flavor - yum!
