Marshmallow and Liquorice Cough Syrup

ingredients

  • 4 tablespoons dried or 8 tablespoons fresh marshmallow root, roughly chopped
  • 1 teaspoon aniseed seeds
  • 1 teaspoon whole cloves
  • 3 heads/bunches fresh elderberries
  • 2 dried liquorice roots, broken up into small pieces
  • 1 sprig fresh eucalyptus leaves (about 8 leaves)
  • Peel of 1 mandarin orange
  • 1/2 cup honey
  • 5 tablespoons glycerine
  • Juice of 1 lime
    • Cook's Note: If using fresh marshmallow root, use 4 dried liquorice roots.

      Put the marshmallow, aniseed, cloves, elderberries, liquorice, eucalyptus and orange into a saucepan with 2 1/8 cups water. Simmer until the liquid is reduced by one-fifth. Remove the liquorice and eucalyptus leaves and discard.

      Blend the mixture in a blender until smooth. Pour the liquid back into the pot and add the honey, glycerine and lime juice. Stir and simmer for 2 minutes.

      Pour into sterilized, clear 250-milliliter bottles. Take 2 tablespoons 3 times a day.

      Keep refrigerated. Use within 2 weeks.
