Special equipment: a deep fryer
Heat some oil in a deep fryer. Whisk together the mayonnaise, chipotle paste and lime juice in a small bowl.
Deep fry the perogies until crispy and transfer to a plate. Sprinkle with the Cheddar while still hot; zigzag with the mayonnaise mixture and top with some sour cream, salsa and cilantro.
