Sounded so good, but ended up being mushy and blah. Just didn't do anything for me. Maybe a stronger cheese, and/or adding sour cream, butter or something to the potatos (including more salt, as mentioned in the other review would help, but given the effort involved in this side dish, I won't try again.

I thought this was a good recipe so I thought I'd give it a try. It is super easy. The only thing I would suggest is being a bit heavy with the salt. I used mixed up salt and I could have used more. Also, I mixed the riced potato together to form a "dough" and then pressed it flat on a plastic cutting board. I then used a biscuit cutter to make the patties. I found this to be easier and uniform.
