Lizzie's Granola

ingredients

  • 4 cups rolled oats
  • 2 cups unsweetened coconut
  • 2 cups slivered almonds
  • 1 cup cashews
  • 3/4 cup olive oil
  • 1/2 cup honey
  • 2 teaspoons ground cinnamon
  • 1 teaspoon kosher salt
  • 2 cups of your favorite dried fruit, such as dates and dried cherries, chopped

Directions

Preheat the oven to 325 degrees F.

Combine the oats, coconut, almonds, cashews, oil, honey, cinnamon and salt in a large bowl, and toss together to coat. Spread evenly on a baking sheet. Bake until golden, 30 minutes. Let cool completely on the baking sheet. Add the dried fruit and serve. If not using right away, store in an airtight container, adding the dried fruit to order.

    I love this granola. It is so yummy.
    I changed the nuts a little. I used 1 cup of sliced almonds, 1 cup of cashews and 1 cup of chopped pecans (not too fine). I mixed in 1TBSP of Mapel syrup and I used light tasting olive oil (suitable for baking).

    Wow, this is great! Only thing I changed was I used 1 cup of coconut unsteady of 2 (since my husband and I aren't huge fans). It is SOOOO yummy!

    Best stuff ever - I make this for the gang at work and they fight about who is taking home the leftovers. This is very flexible to cater to individual tastes. I usually don't use quite that much oil and sometimes substitute golden syrup or maple syrup for the honey. No matter what you do it's good!
