      Directions

For the topping: Preheat the oven to 325 degrees F.

In a small bowl, combine the oats, sugar, almonds, butter, cinnamon and salt and stir with a fork until the mixture resembles coarse crumbs; set aside.

For the filling: In a medium bowl, stir together the peaches, sugar, cornstarch, almond extract and nutmeg and transfer to an 8- or 9-inch shallow baking dish. Crumble the topping over the peach mixture. Bake until the filling is hot and bubbly and the topping is golden brown, 40 to 50 minutes.

Serve warm with vanilla ice cream if desired.

I have also made this with apples and pears. You could use any fruit. I like the fact that Symon does not use any flour in this. Very good, always a company pleaser as it such a comfort dessert.

Saw Michael making this on his show, and since we had some huge peaches that were ready to use, gave it a whirl. It is absolutely fantastic! The flavors meld so well, and the crunch from the toasted oat and almond mixture on top is really great with the sweet and fragrant peaches! Made the whole house smell good! We used a bit more cinnamon, but just because we like it! Will make this again - and it's so good, you can skip the ice cream!!! Thanks, Michael!
