    Looks fantastic! I've made a version of this without the ricotta -- it's similar to guacamole in texture and color, and a little on the healthier side.

    My friend made this dip for a get-together and served it with toasted bread. Oh my lord. I can't believe how good the combination is. Everyone kept asking her for the recipe, to which she gave Chef Symon the props he deserves on this one. It seems so simple (I guess, it actually is) but the flavor is amazing. I probably ate a cup of it on my own. This is my new "go-to" dip for parties - bye bye guac, hello Sweet Pea Dip. Seriously, people, try this, you won't be disappointed.
