Directions

Heat the olive oil in a skillet over medium-high heat. Sprinkle the chicken with salt and pepper and cook until golden brown, about 3 minutes on each side. Set aside on a plate to cool.

In a medium bowl, add the olives, onions, capers and garlic. Chop the cooled chicken and add it to the bowl. Add the feta cheese and lemon juice and toss all the ingredients together.

To serve, slice the baguettes and pile some of the mixture on each baguette.

I like it! I just finished making it and made it all cold because it'll be brought for lunch tomorrow so no need to heat up the chicken. I thought it was going to be too salty with the capers, feta AND kalamata but it wasn't. A good healthy squeeze of the lemon and a tbsp of olive oil brought it all together. I seasoned the baked chicken with Herbes de Provence when I baked it last night and I think that added another great flavour to the dish. Bam! Nice work Nadia!

Easy and delicious...this will be a regular rotation for my work lunches! Left out the capers since I didn't have any on hand, and added some Poultry Magic seasoning to the raw chicken. I only wish that my baguettes were bigger so I could enjoy more of the filling.
