I made the recipe with a couple of changes. Firstly, I doubled the amount of chickpeas and secondly, I substituted the dried apricot and figs with dates just for the heck of it! Everything turned out delicious! Awesome recipe!

Ive made this twice now Serves more than six if used as a side dish. Gets better as it ages in the frig. Takes planning as I dont usually have all these ingrediemts on hand. My husband loves it and he usually resists vegetables. Takes more than one hour to prep the vegetables - more like 1.5 hours.
