This is simple and delicious, but it needs salt! Add some with the spinach. Also, when you add the pasta to the sausage mix, don't be afraid to add some pasta water along with it. It mixes with the olive oil and makes a buttery sauce without butter. I used spicy turkey sausage in place of the chicken sausage and doubled the garlic. Great, quick meal!

I made this for my family but used a combination of 2 hot and 4 sweet links of Italian sausage (pork, naturally. I also doubled the garlic because I'm freaky that way. Thanks Nads! Next time, I'll add some Italian tuna fish, capers and pitted olives instead of the sausage and spinach.
