    I don’t have a problem with time in cooking I enjoy it so much. It takes about 25 mins in prep, while the pasta water is coming to a boil. I made the sauce almost as is and I have to say it is one of the more better red sauces I have found.
    With a little spice, sweet with that rich tomato flavor. In addition to the oregano I do add a 2 tsp of Miscuglio ( a spice blend from oil and vinegar) this is a very good Italian herb blend.
    I do a heavy simmer for 25 to 30 mins covered stirring some so not to scorch, remove the lid and cook off most of the liquid till it just starts to thicken remove from heat return lid. Cook pasta and assemble then bake as directed. I used San Marzano whole tomatoes hand crushed with whole milk mozzarella and pecorino parmesan.

    This was awesome. My Boys ate it up. They requested that I put this on the weekly fav list. My DH which is extremely picky said it was delicious. Can't wait to make something else of Nadia's.

    Not my most favorite thing to cook since it takes well over an hour to prepare, but my family loved this. I will definitely make the bolognese again when I make pasta; it was excellent.

    Not exactly hi-speed since it takes close to an hour, but easy and tasty. For tradition's sake we added a couple ounces of cream to the quickie bolognese, it just seemed wrong to leave the dairy out. Spend a little extra for San Marzano tomatoes and fresh mozzarella - in a recipe this simple, quality ingredients make a difference and it'll still come in under $2.50 a serving.
