Too much lemon juice. Cut it back to 1 tablespoon and go from there. Don't make it the day before, it dried out too much. Mix together right before serving to keep it a little creamy. Also, the serving size is way off. This could easily feed 12 people as a main course, or 24 people as a side dish.
