This recipie or a variation of it has become one of my "go to" suppers! So easy, and usually have all the ingredients ( or form of in the kitchen. Have made it with all chicken thighs or a combo of thighs and breasts as well as a cut up fryer. Have used a variation of veggies as well, fresh peppers, or even fresh brussel sprouts. I even have tossed in a couple of sliced hot Italian sausages, and left out the chilli oil. Line the pan with foil (or use a foil roasting pan, and you have a complete supper with hardly any clean-up.
