    Well, I've not made the complete recipie. Meaning I haven't made the dressing and spinach salad. But the spatchcock technique and the roasting directions is how I roast my Cornish hens now. It's fantastic, easy, and always perfect. I do serve it with salad, but usually one that my family is familiar with. Great Technique.
