In a double boiler, combine the beer, cheese and cream and cook until melted together.
Thinly slice the rib eye and season with salt and pepper. Heat a grill or grill pan to medium-high heat and sear the steak to medium-rare.
Saute the onions with some oil in a skillet over medium heat until cooked. Toast the baguette.
Place the steak in the baguette, pour the melted beer cheese over the meat and top with the sauteed onions. Enjoy!
