  • 4 cups all-purpose flour
  • 1 tablespoon fresh yeast, crumbled
  • 3/4 cup white wine

Directions

Mound the flour on a smooth work surface, and create a well in the middle of the flour. Break up the cubes of yeast with your hands and add it to the well, along with the white wine, olive oil and a portion of salted lukewarm water. Work the flour slowly, adding the rest of the salted lukewarm water as needed until it turns into a uniform dough.

Cover the dough and let rest to rise for about 20 to 30 minutes at room temperature.

    I also needed to add extra flour to make this dough, but the flavor & texture of the resulting pizza crust was PERFECT!!! By far the best pizza crust my husband & I have ever had! We'll never order out again!! I made it by hand in a large bowl and did add a pinch of sugar to "feed" the yeast. Other than that, and the additional flour (I even used "00" Italian flour, too!, I followed the recipe exactly. Really wonderful. I gave it four stars because of the need for the recipe to be tweaked a bit as far as the flour quantity is concerned...other than that, it was FABULOUS!

    This is the best pizza crust I have ever tasted. Followed the recipe exactly. Next time I'll add one more tsp of salt. Next time I'll actually make it the way Nonna did on the show. I tried using my kitchen aid mixer with the dough hook. It was difficult judging the wetness of the dough. It came out super sticky and need to add a ton more flour just to get the dough the point where it would stop sticking to everything and I could stretch it.
