markets and Italian specialty stores.
Preheat the oven to 400 degrees F.
Toast the pumpkin bread for about 6 minutes. Allow the bread to cool then spread each slice with a thin layer of apricot
jam. In a small bowl, mix the remaining jam
with the mustard
fruits and smoked chicken
. Spoon chicken mixture onto each slice of bread. Cut the sandwiches in half diagonally (corner to corner) and arrange on 4 plates. Garnish with the plums, if desired, and serve.
