  • 2 pound chicken breast, boneless and skinless, cut into 1-inch pieces
  • 1/2 cup yogurt
  • 1 cup papaya chunks
  • Serving suggestion: Serve with rice or rotis.

Directions

Place a large skillet over medium-high heat and add the oil. When the oil is hot, add the onion, garlic and ginger and saute until the onion is softened, about 4 minutes. Add the cumin seeds, coriander, fenugreek seeds, and paprika and toast for 10 seconds and then add the chicken pieces and cook until it is nearly done, about 8 minutes. Add the yogurt and finish cooking the chicken, about 2 more minutes and then stir in the papaya chunks. Serve the chicken with rice or rotis.

    I made this exactly as listed. Hubby and I really enjoyed it. However, next time I'm going to add a bit of salt, and grind the cumin seeds. One bite of these little puppies overpowers any other flavors in your mouth.

    The chicken was good. I ran out of yogurt so I used sour cream. I was skeptical about the papaya fearing that it may be a little too sweet so I used butternut squash instead. It had bit of sweetness to it and it was soooooooooooooo good. The lady at walmart asked how does the squash taste I tld her I didn't know, I'll have to wait and find out lol.

    the fenugreek seeds/powder/leaves can be purchased at Indian and Pakistani groceries, because there millions of those people here. Thank God.

    Our store frequently has Papaya even in February but didn't today so I used a jar of refrigerated Mango slices from the produce dept. We really liked this dish. We ate it with Basmati rice and the Spice Goddess Green Beans with cilantro. Now I'm anxious to try it with the papaya.
