Ingredients

  • 5 Tbs. extra-virgin olive oil
  • 5 eggs
  • 3 Tbs. Sambuca
  • 3 Tbs. sugar
  • flour

Directions

Mix the olive oil, eggs, Sambuca and sugar in a bowl. Add enough flour to make a firm dough. If you have one, use a traditional pizzelle iron. If not, use the electric version. Brush both sides of the iron with a little olive oil. Place a small piece of the dough into the center of the iron. Close the iron and cook for about 2 minutes. Remove from the iron and set aside. 

To Plate: Place on a decorative platter and serve as is, or spread jam, chocolate or honey onto the pizzelle.
