Preheat the oven to 450 degrees F.
Sprinkle the pork chops liberally with salt and pepper. Heat a large cast-iron skillet over high heat until very hot. Place the chops into the skillet and sear
on one side, and then flip and transfer the skillet into the oven. Roast
until the internal temperatures reaches 145 degrees F, about 8 minutes. Loosely cover the chops with tin foil and let rest.
To serve, lightly sprinkle with more salt and pepper and a generous drizzle
of the Apple-Cran Gastrique.
