Pork Chops and Lemon Potatoes

  1. Preheat the oven to 450 degrees F.
  2. Mix together 1/2 cup of the olive oil, 2 tablespoons of the oregano, half of the lemon juice and the garlic. Marinate the pork chops for at least 1 hour.
  3. Meanwhile, drizzle a very small amount of the olive oil over the potatoes. Toss with the remaining oregano, some salt and pepper. Place the seasoned potatoes on a shallow baking sheet and pour the remaining olive oil, lemon juice and 1/2 cup water in the gaps between the potatoes (do not pour over the potatoes-you will wash off the oregano!). Bake until golden and crispy, 45 minutes to 1 hour.
  4. Preheat the grill to medium-high heat.
  5. Grill the pork chops to medium-well, 10 to 15 minutes. Serve with the potatoes.
