I absolutely loved this recipe! I just made it tonight for my boyfriend and I, and we licked it up. The meatloaves were delicious, and I loved the little pockets of cheese on the inside. The BBQ sauce definitely had some kick to it from the chipotles so I will warn about that. Went perfectly with sweet potatoes! Yum!

This recipe was excellent! I actually bought a mini muffin pan just so I could make this recipe (because I am a dork. It's very easy to make, super moist, all around delicious!! The BBQ sauce made from scratch is so yummy. The meat loaf has such great flavor, this recipe is a must try. I must say, Rachael's recipes never fail me
