Place the croutons and the almonds in a food processor. Pulse until it becomes the texture of bread crumbs. Add the crouton and almond mixture to the hot pasta. Add the peppers and the olive oil. Toss to combine and serve.

Fantastic! My husband saw this on TV and wanted to try. This was the easiest recipe to follow and it was delicious. Loved the idea of the almonds. I used penne pasta and it worked really well. Thank you Giada.

Very easy to prepare, ingredients blended well together, I substituted penne pasta for the rigatoni. Was a tad dry so I added another 1/4 cup of olive oil which made it much better. Great flavor with the croutons, almonds and roasted peppers. Will definately make this one again. Great recipe, Giada...thanks.
