Unique pasta salad recipe with a very different oniony dressing. Better with the coconut for sure!

We loved this! I do have to say I did not use the coconut. I would have loved to but I am the only coconut person in my house. I think we all liked the grilled onions the most. They were so sweet. I think the coconut would have been another great sweet element to balance the oniony flavor from the green onions. It was still good though.

This dressing came out amazing. I made this early in the day to have it chill in the refrigerator for later and I really think it helped add flavor to the dressing. It is super easy to make, and it tastes great. A little more salt and pepper is needed, and I eliminated the coconut as my boyfriend and myself aren't the biggest fans of it. Overall, LOVED this dressing and will definitely make it again.

The dressing is outstanding! I use it on lettuce, and haven't gotten around to using it on the pasta salad yet, however.
Two notes: When you taste it to add the seasoning, it will taste very bland. It needs a lot of salt and pepper to bring out the flavor. Also, I find it's even better if you can make it a day ahead and let it sit overnight in the refrigerator. Then it's delicious!
