WOW! This is a keeper. Did not have to change a thing. Flavors work so well with each other, and the presentation is beautiful. Be sure to use a large bottom plate or bowl. If the brodetto is too deep it will cause the pea puree and brodetto to disolve into a green soup. Mint is such a great complement to the peas, garlic, and parm. With all of the complex flavors going on in this dish the salt and pepper do just fine as seasonings for the salmon. Very clean flavor.
Great do ahead dish as everything except the salmon can be prepared ahead of time. Leave fish out about 15 minutes before you begin if you want it a little more done. Keep refrigerated till you begin cooking if you like it more to the rare or medium rare side.
This goes intom my "Just Make It" file.

The flavors were wonderful. I was not sure about the pea puree but the flavor with the garlic was a fantastic. This one will be a repeat in our house.

Easy and elegant, this is a dish I am proud to serve to guests. I do tend to use a favorite seasoning blend on the fish as opposed to just salt and pepper and I suggest you keep in mind your flavoring preferences as well. Also, be mindful that the peas are interchangeable with other vegetables similar in consistency as peas put some people off. Glad to have this in my repertoire. Thanks again, Giada!
