Directions

In the bowl of a stand mixer fitted with a whisk attachment, mix together the milk, oats and canola oil until fully incorporated. Then add the flour, baking powder, salt and eggs, and mix again.

Heat a griddle to medium heat and coat with the nonstick spray. Ladle about 1/4 cup of the batter onto the skillet to make a pancake. Repeat, being sure to space each pancake out on the griddle. Sprinkle a handful of chocolate chips onto each pancake and press the chips into the batter with a fork.

Cook, until tops begin to bubble, about 2 minutes. Flip with a spatula and cook about 1 minute more on the second side. Transfer to a platter and cover loosely with foil to keep warm. Repeat the process until you run out of batter.

When ready to eat, warm the maple syrup and serve.

    Best pancakes ever, I do not normally like pancakes but the family does but these ones are liked by all. I had three apples getting to old to eat I grated them into the batter and it did not change the consistency. Made a lot of pancakes which made it easier to feed spring break visitors. Froze some.
