Heat a griddle to medium heat and coat with the nonstick spray. Ladle about 1/4 cup of the batter onto the skillet to make a pancake. Repeat, being sure to space each pancake out on the griddle. Sprinkle a handful of chocolate chips onto each pancake and press the chips into the batter with a fork.
Cook, until tops begin to bubble, about 2 minutes. Flip with a spatula and cook about 1 minute more on the second side. Transfer to a platter and cover loosely with foil to keep warm. Repeat the process until you run out of batter.
When ready to eat, warm the maple syrup and serve.
