South Carolina-Style BBQ Sauce

This sharp, bright yellow and super punchy barbecue sauce goes equally well with chicken, fish or pork. Cook your meat at least halfway before adding the sauce to prevent burning.

  • 1 tablespoon unsalted butter
  • 1/4 cup finely chopped onion (about 1/4 small onion)
  • 1 cup yellow mustard
  • 2 tablespoons lemon juice (about 1 lemon)
  • 2 tablespoons light brown sugar
  • 1 tablespoon honey
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon dried mustard powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon hot sauce

Directions

Melt the butter in a saucepan over medium heat. Add the onions and cook until soft, about 3 minutes. Add the yellow mustard, lemon juice, brown sugar, honey, black pepper, mustard powder, salt and hot sauce and simmer on low until slightly thickened, about 15 minutes.

Puree in a blender if you prefer a smoother sauce, or leave as is if you don't mind a little texture. Use immediately, or refrigerate for up to 2 days.
