Directions

Preheat the oven to 350 degrees F. Coat a rimmed baking sheet or a jelly roll pan with cooking spray.

Combine the butter and chocolate in a small metal or glass bowl set over a pan of simmering water. Melt the chocolate, stirring occasionally.

Whisk the eggs, dark brown sugar, vanilla, salt and ginger in a large bowl. Stir in the melted chocolate and then the flour. Pour the batter into the prepared pan and spread with a spatula. Bake until a toothpick inserted into the middle comes out mostly clean with a few crumbs, about 10 minutes.

Use a spoon to scoop the brownie into a bowl and beat together with the rum until crumbs start to come together to form a ball. Scoop with a cookie scoop to make 1-inch balls and roll between your hands. Roll in sanding sugar and refrigerate until firm, about 2 hours.

Again, different recipe than the one from before. These were much more bitter on the finish. I added extra rum (3/4 cup!) and they held it well without being too wet. I'm not sure the ginger is the best. Maybe I need to try fresh grated ginger next time. I will make these again but I need to play with the flavor a bit. Everyone LOVED them when I did them 2 yrs ago.

I made these last night and refrigerated them, thinking that the consistency would be that of regular rum balls. I did add more rum than the recipe called for.

I rolled mine in coconut and confectioners sugar for a variation. Try adding pecans or walnuts to this recipe. They are great!!!

WELL, these are delicious! Kudos Chrisy and John! Hopeully, some will be left for guests!

very nice flavor not real strong. I rolled them in powdered sugar instead of granulated which was very quick.I had lots of complements from the family
