    In cup, combine soy sauce, ginger, sugar, crushed red pepper, and garlic; set aside. Heat nonstick 10-inch skillet over medium-high heat until hot. Add chicken and cook 4 to 5 minutes or until no longer pink, breaking up meat with side of spoon.

    Add celery to chicken in skillet, and cook 2 minutes, stirring occasionally. Add water chestnuts and soy-sauce mixture; cook 1 minute to blend flavors. Stir in peanuts. Divide chicken mixture among lettuce leaves. Fold leaves over chicken mixture and eat out of hand.

      I love these, and they are so light and healthy. Every time I make hem someone asks for the recipe. I also added 1 carrot, 1 red bell pepper and 1 yellow bell pepper for lots of color.

      This was pretty good but is lacking something in the sauce - it needs some kind of peanut sauce. It was easy to make, but i need to tweak it next time.

      This is the new, quick "go to" meal for our family. So good and satisfying we made a double batch the second time! We were out of water chestnuts, so we swapped in some shredded carrot and diced pepper instead. mmmmm. Extra Sriracha on mine, please!
