This is a warming and tasty soup. We aren't vegetarians but we made it with tofu and it was delicious. It's a flexible recipe and will lend itself to any number of other ingredients, such as noodles. We used 10 oz of mushrooms and didn't have rice wine, but the rest of the recipe we followed as written. Would recommend it to anyone for a satisfying winter meal. Excellent!

This is a wonderful soup. A real crowd pleaser, especially for the vegetarians, but everyone in a group of nearly 20 people enjoyed it, with several asking for the recipe. I'll be making this again!
