Sooo good! I could not tell it was pumpkin in these enchiladas. I picked up hot enchilada sauce by accident, so they were pretty spicy, but still very, very tasty. I also used whole wheat tortillas instead of corn tortillas, and they turned out great.This is the perfect dish to whip up on a busy night - it was ready in 15 minutes. I will definitely be making these again!
