In a 2-quart saucepan, add 4 cups of water and bring to a boil.
Add the ginger and simmer for 15 minutes. Take the pan off the burner, and add the lemon balm and mint. Steep the mixture for 1 hour.
Strain the liquid into a pitcher or jar, add the lemon juice and if you like it sweet, then add some honey. Cover and refrigerate. Serve cold or hot.
Lemon balm can be found at your local farmer's market.
